About the Recipe
Elevate your BBQ with this melt-in-your-mouth wagyu smoked to perfection slow and low with a rich Italian sauce. This recipe will quickly become a family favorite.
3-5lbs of Ovoka Farm Wagyu osso bucco
1 tsp kosher salt & ground pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp ground thyme
2 sprigs of fresh thyme
2 bay leaves
1 tbsp vegetable oil
2-3 stalks celery chopped
1/2 cup yellow onion chopped
2-3 carrots peeled and chopped
3+ cloves garlic minced
1 1/2 cup beef broth
1 cup red wine of choice
1/3 cup kalamata olives chopped (optional)
2 cups vine tomatoes diced
6 oz can tomato paste
Heat the smoker to 275F degrees with cherry wood (or hickory).
Season the Wagyu osso buco on all sides with salt, pepper, garlic powder, onion powder and ground thyme.
Place the meat on the smoker over indirect heat and lid closed for roughly 2 1/2 hours.
Place a large seasoned cast iron pot on the stove over medium heat. Heat the vegetable oil. Add the celery, onions, carrots and garlic and sauté, until tender. Add the remaining ingredients and stir to combine. Place the Wagyu osso buco in the pot.
Increase the smoker heat to 300F degrees. Place the cast iron pot on the smoker and cover with a lid for 2 hours.
Using two forks, shred the Wagyu, removing the fat, gristle and bones. Mix with the sauce.
Serve over mashed potatoes, polenta, cheesy grits, or pasta.
