Another Butcher's Secret:  The Tri Tip!  Cut from the bottom of the sirloin, the hearty, juicy Tri-Tip is beautifully marbled and suitable for all methods of cooking.  We love using it for winter roasts, but it can be slow-grilled whole or cut and seared as steaks.  One of the more versatile cuts.  Weight of cut is ~2.5lbs.
