Perfect for an affordable, family feast.  For the D.I.Y. butcher, the blade can be cut into steaks and, because it's F-1 Wagyu, the meat is tender and delicious.  Many love to braise this cut.  We usually sous vide the whole cut, sear it before serving, and have our friends bring the sides for dinner.   Weight of cut is ~3-4lbs.
