For the home butcher, the chuck roll is quietly gaining attention among wagyu lovers as the rib-eye side of the chuck roll includes cuts such as the chuck flap - named zabuton or pillow in Japanese for its tenderness - that are similar to the marbling and flavor of the premium cuts but more affordable.  The flavorful and tender Chuck Roll is separated from the Under Blade section of the Chuck Roll and can be cut into Chuck Eye Roasts and Steaks or Boneless, Country-Style Ribs.  Cut for Shabu Shabu is our personal favorite for the Chuck Roll.  Weight of cut is ~20lbs.
