The F-1Wagyu skirt steak is cut from the plate primal - the boneless portion of the diaphragm muscle. Rich in flavor and easy to work with, this is our favorite cut to marinade and sear over high heat on the grill.  Whether served as a long steak or chopped for fajitas, the skirt steak is a restaurant favorite cut, too.  Remember:  After cooking, cut the skirt steak in thin pieces against the grain.  Weight of cut is ~1lb.
